Keeping Lettuce FreshTo store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.

This salad sounded wonderful, but was disappointed when I tasted it. The dressing was less than desirable. I think with a different dressing it would be much better.

This was a true hit at our family Christmas gathering.Good taste combinations with the apples and pears and nuts.We did not have cashews so used pecans instead.

Answer for 'bleewkerr':I always prepare the dressing ahead of time, wash/cut up the lettuce, prepare the add-ins (except the fruit, it will go brown) and then right before serving mix it all together. Otherwise, the lettuce goes soggy. You can even prepare the dressing the night before and keep it in the fridge.

Very yummy salad! The dressing was very light and the add-ins made it special. I only used 1 gala apple, cranberries and pine nuts cuz didn't have the other ingredients. I also used a bit of mayonnaise in the dressing to help the emulsion.

Really people don't you think you should read the whole recipe! At the top,next to the picture it say Diabetic friendly and at the bottom next nutritionals it has Diabetic Exchanges!!

I love this recipe, I had to try it out for a Christmas luncheon and it was loved by 10 ladies, and I will make it again for Christmas dinner for my family. It made a big hit. It is a keeper. thank you

I don't get in the review sections for the simple fact, some people are so rude. They just look for something to complain about and to insult people. People try to share recipes and there is always someone putting it down. Come on people, what happened to "thanks for posting your recipe?" Keep on posting vrdeboer, I enjoy looking at your recipes.

I look forward to making this recipe, and while I haven't made it yet, I wanted to address some of the other reviews. Actually, it DOES say it's diabetic friendly on top where it says THIS RECIPE IS: Healthy, Quick and Diabetic Friendly. What we all have to remember is, it's all about portion control, and if you realize the amount of the item you're preparing is often for MANY, then do your math. Again, if you don't want to make it, then don't, but you don't have to bad mouth it, it's still up to the individual cook.

To vrdeboer: The only crime here is YOU can't read. It says Diabetic Exchanges NOT Diabetic Friendly! Learn to read before opening mouth and exposing the sad fact.

Very good!! To vrdeboer: I don't see where anyone called this diabetic friendly, only that it gives diabetic exchanges. If you don't like a recipe, don't try it. I hate when ppl don't get on to rate a recipe but instead make bad remarks (many posters do this). If you don't like it, don't try it.

The carbs is this salad are only 1 carb serving. 15 gms. are a serving the same as an apple or slice of bread. This salad is amazing.

My aunt makes a version of this recipe with only pears. Personally I don't like cashews either but in this salad they're fine! This salad is always gone at the end of dinner. yummo!

My objection is that you call this diabetic friendly!!!!!!! 17 grams of carb is a crime, and should never be the price paid for a salad - no matter how good. If one is not diabetic, this is lovely.

I tried this at a dinner party, and the dijon mustard gives it just the right combination of sweet and tangy. I dislike cashews, so I substituted pecans.
