Holiday Brunch Casserole Recipe

Ingredients

  • 4 cups frozen shredded hash brown potatoes
  • 1 pound bulk Johnsonville® Ground Sausage, cooked and drained
  • 1/2 pound bacon strips, cooked and crumbled
  • 1 medium green pepper, chopped
  • 2 cups (8 ounces) shredded cheddar cheese, divided
  • 1 green onion, chopped
  • 1 cup reduced-fat biscuit/baking mix
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 cups 2% milk

Directions

  • In a large bowl, combine the hash browns, sausage, bacon, green pepper, 1 cup cheese and onion. Transfer to a greased 13-in. x 9-in. baking dish.
  • In another bowl, whisk the biscuit mix, salt, eggs and milk; pour over the top. Sprinkle with remaining cheese. Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Yield: 12 servings.

I used raw potatoes and shredded them myself. My family loved this dish for Sunday Brunch.

Good recipe. I added 1/2 cup sour cream into the eggs and a dash of cayenne pepper for a kick. Family loved it.

I usually use full package of shredded hash browns and 2 pounds of sausage and 1 pound of bacon.

I have frozen it and it reheats just fine.

I haven't made this yet but I have no douby that will be delicious. But I to was wondering if I could freeze it uncooked for a later meal. (I have Christmas Day in mind)

One problem. I tried to cut the recipe in half and it didn't turn out very good. It's a good thing I have a neighbor who doesn't have much money, so I make as is except that instead of green bell pepper I make it with diced Ortega chilis. Gives it a bit more pizzaz. Then I cut in 1/3 for me, and 2/3 for her family. Works out great!
