I used raw potatoes and shredded them myself. My family loved this dish for Sunday Brunch.

Good recipe. I added 1/2 cup sour cream into the eggs and a dash of cayenne pepper for a kick. Family loved it.

I usually use full package of shredded hash browns and 2 pounds of sausage and 1 pound of bacon.I have frozen it and it reheats just fine.

I haven't made this yet but I have no douby that will be delicious. But I to was wondering if I could freeze it uncooked for a later meal. (I have Christmas Day in mind)

One problem. I tried to cut the recipe in half and it didn't turn out very good. It's a good thing I have a neighbor who doesn't have much money, so I make as is except that instead of green bell pepper I make it with diced Ortega chilis. Gives it a bit more pizzaz. Then I cut in 1/3 for me, and 2/3 for her family. Works out great!
