Holiday Brunch Casserole Recipe

Ingredients

  • 4 cups frozen shredded hash brown potatoes
  • 1 pound bulk Johnsonville® Ground Sausage, cooked and drained
  • 1/2 pound bacon strips, cooked and crumbled
  • 1 medium green pepper, chopped
  • 2 cups (8 ounces) shredded cheddar cheese, divided
  • 1 green onion, chopped
  • 1 cup reduced-fat biscuit/baking mix
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 cups 2% milk

Directions

  • In a large bowl, combine the hash browns, sausage, bacon, green pepper, 1 cup cheese and onion. Transfer to a greased 13-in. x 9-in. baking dish.
  • In another bowl, whisk the biscuit mix, salt, eggs and milk; pour over the top. Sprinkle with remaining cheese. Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Yield: 12 servings.

This is a great recipe! I add a little black pepper too for a little extra flavor! Very good for Easter Brunch too!

After 30 minutes it was still soupy. Had to bake another 15 mminutes. Not that great.

I will make this recipe again! Served it on Christmas morning for the entire family....everyone LOVED it. Added a bit of sour cream. It was delicious. It WILL become a holiday tradition!!

When I made this recipe, I put about half the amount of sausage and bacon called for in the original recipe. I also made my own baking mix. It turned out really great! Next time I may add some sauteed mushrooms and a pinch (or two) of cayenne pepper.

This was really good, very filling and made a ton! I did not refrigerate mine overnight... all I did was up the oven temperature to 400 and let it cook about 45 minutes, adding the cheese topping for the last 10 minutes. It turned out great!

By far, my favorite b-fast casserole. It had more texture and was heartier than the avg egg casserole. Typically, I feel unsatisfied after eating, but this one was perfect. I added mushrooms, and added 2 eggs, 1/2 cup sour cream, decreased the milk, and added gr. mustard (per the recommendations in the other comments.) It really was delicious.

I add more eggs and less milk otherwise it doesn't set up. This is a favorite with my family. It's requested often, many times we have it for dinner (breakfast for dinner is a big hit!).

I also needed to increase baking time when following recipe as printed on site. Ended up taking about 50-55 minutes instead of 30-35. After reading reviews, will likely add some dry mustard next time, but otherwise, it was very good!

Made this dish for Christmas morning brunch. I love this type of recipe because it is SO simple & done the night before so the morning is a breeze. I made several modifications using the best of all the reviews posted here for this recipe - thanks ladies!! Here's what I did: (1) I used 'southern style' cubed potatoes; less "mushy" then reg hash browns. (2) used diced ham cubes (pre-cooked from the deli dept.) instead of sausage (3) used a jar of bacon pieces instead of cooking a batch of bacon. (4)Increased to 6 eggs but reduced milk to 2 1/2 cups (5) added about 1 tbs of dry mustard (make this into a paste with some of the milk or it clumps) (6) added about 1/2 cup of sour cream (7) increased Bisquick to almost 2 cups. (8) MOST IMPT - you must increase the bake time almost double to really cook it through & get it a bit bubbly/crispy on top. I baked for 65 mins. Perfect! Also served broiled cheese topped tomato slices as a side. EXCELLENT - had a very happy family. Blessings to all. (Live with Gratitude!)

The first time I made this it was a bit runny. The second time I used some canned mushrooms and reduced the milk a bit, and it was more firm like I wanted it. I also put it in a 11x17 pan to spread it out a bit and it cooked more evenly and crisped on the top a little better. The taste is really good, and it is great a make ahead, I plan to put one together to take camping and cook it in our dutch oven this summer, the ingredients and textures seem like they would work great for that. Thanks for a great staple recipe.

I made this Christmas morning and it was a hit. We will be making this one part of our yearly brunch tradition. I took several liberties with this recipe but it was fantastic still. I used turkey breakfast sausage and used 2 whole eggs and egg substitute due to dietary restrictions in our house but it was still fantastic. We will probably add this recipe to Easter Brunch as well.

My husband and daughter loved it! I substituted frozen southern style hash browns (cubes) for the shredded hash browns and used only 3/4 lb of pork sausage, I added additional shredded cheese to the top, as my family loves things cheesy. This recipe has now become part of our Christmas breakfast menu. Thanks for an easy, quick and tasty recipe!!

I usually use full package of shredded hash browns and 2 pounds of sausage and 1 pound of bacon.

I have frozen it and it reheats just fine.

One problem. I tried to cut the recipe in half and it didn't turn out very good. It's a good thing I have a neighbor who doesn't have much money, so I make as is except that instead of green bell pepper I make it with diced Ortega chilis. Gives it a bit more pizzaz. Then I cut in 1/3 for me, and 2/3 for her family. Works out great!

I used frozen bell pepper/onion mix as this was all I had. Fresh chopped bell pepper would have made it better. I also increased the cooking time by over an hour! Next time I would make it in 2 smaller dishes to help it cook faster and more evenly. Otherwise it was pretty good.

When I went to make this the store was out of the Shredded hash brown potatoes so I made it with the cubed hash browns and it turned out fine. I took it to work for a feasting day we have during Christmas and it was a big hit. I am thinking of trying ham cubes next time instead of bacon. Can't wait. Thanks

I don't normally buy biscuit/baking mixes, but someone had given me a box, so I had some on hand and needed to use it, hence I found this recipe. It tastes delicious with a drizzle of maple syrup. It definitely isn't a dish very compatible with watching your calories, but it tastes delicious! My family gave it thumbs up on flavor and being filling.
