Ingredients

  • 1/2 cup packed brown sugar
  • 1 teaspoon apple pie spice or pumpkin pie spice
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1 tablespoon egg white
  • 2 cups blanched almonds

Directions

  • In a small bowl, combine brown sugar and seasonings; set aside. In another bowl, whisk egg white until foamy. Add almonds; toss to coat. Add spice mixture; toss to coat.
  • Spread on a greased foil-lined baking sheet. Bake at 325° for 20-25 minutes or until lightly browned, stirring occasionally. Cool completely. Store in an airtight container. Yield: 2 cups.

place nut in boiled water for 5 minutes, then slip skins off by pinching nut with fingers. Make small batches for best results. barbara miner

I want to make 20 cups. Do I increase each ingredient by 10? Has anyone else done this? Thanks, Judy

to mamainsonora re: how long to leave the nuts in boiling water to remove the skins. You leave them until they start to float, then you scoop them out and when you are able to touch them, you just pinch then end and the nut will pop out leaving you holding the skin.

 You can find them, in the baking section of the grocery store, already blanched.  It just means that the skins have been removed.

How do you blanche alomonds? I understand you drop them in boiling water for a short period, but how long do they stay in the water?
