Holiday Almond Tassies Recipe

Prep: 30 min. Bake: 15 min./batch + cooling

Yield: 48 Servings

Ingredients

1 cup butter, softened
2 packages (3 ounces each) cream cheese, softened
2 cups all-purpose flour
FILLING:
2 cans (8 ounces each) almond paste
1-1/2 cups sugar
3 eggs, lightly beaten
3 tablespoons orange juice
3 tablespoons heavy whipping cream
1 tablespoon all-purpose flour
1/4 cup sliced almonds

Directions

In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour and mix well. Shape into 48 balls. With floured fingers, press onto the bottom and up the sides of greased miniature muffin cups.
For filling, in a large bowl, combine the almond paste, sugar, eggs, orange juice, cream and flour. Fill prepared cups three-fourths full. Sprinkle with almonds.
Bake at 400° for 12-13 minutes or until lightly browned. Cool for 10 minutes before carefully removing from pans to wire racks to cool completely. Yield: 4 dozen.

I made these tasty treats for Christmas. It was a big hit with family and friends from the Dutch community in California.

Save time for these. They do take half an hour to prep, and the almond paste is a bit expensive. However they were the best cookies on the tray!

Made these for a big anniversary party, huge hit! Be careful how much filling you put in each one, since they really rise. If you have anyone in your family that loves almond this is the recipe for you.

I found this recipe a couple years ago and my family loved them so much I made several batches. I also gave them in festive boxes as Holiday gifts for special friends, family physician, pastor, etc.... I've already had requests for this year!

I love these cookies, and am sure that I will make them again and again. However, even though I filled my cups as directed, I ended up with a full cup or more of extra filling. One can eaily make a dozen more crusts by dividing the original ingredients by 4 (1/4 c. butter, 1/2 of a 3 oz. pkg. of cream cheese, and 1/2 c. flour) to use up any leftover filling if you find yourself with the same situation.
