Herbed Zucchini Ribbons Recipe

Ingredients

  • 3 tablespoons minced fresh basil
  • 1/2 teaspoons grated lemon rind, optional
  • 3 tablespoons fresh lemon juice
  • 1 ounces honey
  • 1 teaspoon vegetable oil
  • 1/4 teaspoons black pepper
  • 1/4 teaspoons salt
  • 4 medium zucchini
  • 3/4 cup chopped red bell peppers

Directions

  • In small jar combine basil, lemon rind, lemon juice, honey, oil, pepper, and salt; cover tightly, and shake vigorously to blend. Set aside.
  • Slice zucchini lengthwise into thin strips, using a vegetable peeler.
  • In large bowl combine dressing, zucchini, and red pepper; toss gently. Serve with slotted spoon.

Nutritional Facts 1 serving equals 46 calories, 1 g fat (trace saturated fat), 133 mg sodium, 8 g carbohydrate, 2 g protein. Diabetic Exchanges: 1-1/4 vegetable, 1/4 fat.
