Herbed French Bread Recipe

Ingredients

  • 1 garlic clove, minced
  • 1/4 cup butter, cubed
  • 2 tablespoons olive oil
  • 3 tablespoon grated Parmesan cheese
  • 2 tablespoons minced chives
  • 1 teaspoon Dijon mustard
  • 1 loaf (8 ounces) French bread, cut into 1/2-inch slices

Directions

  • In a small saucepan, saute garlic in butter and oil until tender. Remove from the heat; stir in the cheese, chives and mustard. Cool for 5 minutes or until creamy.
  • Spread on one side of each slice of bread. Place with buttered side up on an ungreased baking sheet.
  • Bake at 400° for 6-8 minutes or broil 2-3 minutes or until lightly browned. Yield: 4-6 servings.

Nutritional Facts 1 serving (1 slice) equals 224 calories, 14 g fat (6 g saturated fat), 22 mg cholesterol, 375 mg sodium, 20 g carbohydrate, 1 g fiber, 5 g protein.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

Enjoy this recipe with a light-bodied white wine such as Sauvignon Blanc or Pinot Grigio.
