Herbed Baked Salmon

 Herbed Baked Salmon
Bake these light lemon- and herb-flavored salmon fillets in just a few minutes. They're quick enough for a weeknight and fancy enough for company or a special meal.

Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 4 (6 to 8 oz.) salmon fillets
  • Salt and pepper to taste
  • 1/3 cup Crisco® Pure Olive Oil
  • 2 tsps. dried tarragon
  • 4 tsps. fennel seeds, crushed
  • 1 tbsp. grated lemon peel
  • 1 tbsp. fresh lemon juice
  • Lemon wedges

Directions

  • Heat oven to 450°F. Spray a shallow baking dish with no-stick
  • cooking spray. Arrange salmon fillets in prepared pan. Season both
  • sides of fish with salt and pepper.
  • Whisk together oil, tarragon, fennel seeds, lemon peel and lemon
  • juice in small bowl. Spoon mixture over salmon. Bake salmon just
  • until cooked through, about 12 minutes. Serve with lemon wedges.
  • Yield: 4 servings.
Wine: Full-Bodied White Wine: Enjoy this recipe with a full-bodied white wine such as Chardonnay or Viognier.
