Herb Quick Bread

INGREDIENTS
- 3 cups all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1 tablespoon caraway seeds
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground nutmeg
- 1 egg
- 1 cup fat-free milk
- 1/3 cup canola oil
DIRECTIONS
In a large bowl, combine the first seven ingredients. In a small bowl, whisk the egg, milk and oil; stir into dry ingredients just until moistened.
Transfer to a 9-in. x 5-in. loaf pan coated with cooking spray. Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Yield: 1 loaf (14 slices).
