Ingredients

  • 1/2 cup thinly sliced green onions
  • 1/2 cup diced sweet red pepper, optional
  • 1 cup thinly sliced mushrooms or yellow squash, optional
  • 1 cup frozen cubed hash brown potatoes or diced red potatoes
  • 1 tablespoon Crisco® Pure Olive Oil, butter or margarine
  • 1 package Regular Flavor Jimmy Dean® Roll Pork Sausage, cooked, crumbled and drained
  • 1 cup (4 ounces) shredded cheddar, mozzarella or provolone cheese
  • 8 eggs, lightly beaten
  • 1/4 cup milk or water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup Parmesan cheese, optional

Directions

  • In a large skillet, saute onion and other vegetables if desired in oil until vegetables are tender. Add sausage and cheddar cheese; stir well. Distribute sausage mixture evenly into foil-lined cups. In a bowl, combine eggs, milk, salt and pepper; pour over sausage mixture. Bake at 350° for 22 minutes or until eggs are set. Sprinkle with Parmesan if desired. Yield: 12-16 servings.

    Preparation Tips: When purchasing eggs, open the carton at the supermarket to check that none of the eggs are cracked. Move each egg with your fingers to make sure it isn't stuck onto the carton because of a crack you can't see on the bottom. Refrigerate eggs as soon as you get them home. Storing them in the carton helps keep eggs from losing moisture and absorbing odors. Sausage is such a versatile ingredient! Be sure to keep a roll of pork sausage on hand at all times. It easily adapts to every meal of the day, including casseroles for brunch, soups for lunch and stuffing for dinner! You may also want to consider serving breakfast foods for dinner as an economical, family-pleasing meal.
