Having grown up on a dairy farm in Holland, I love our country life in here Idaho's "potato country". My favorite potato soup originally called for heavy cream and bacon fat, but I've trimmed down the recipe. —Gladys DeBoer, Castleford, Idaho

Hearty Potato Soup Recipe
  • Prep: 10 min. Cook: 30 min.

Ingredients

  • 6 medium potatoes, peeled and sliced
  • 2 carrots, chopped
  • 6 celery ribs, chopped
  • 8 cups water
  • 1 onion, chopped
  • 6 tablespoons butter, cubed
  • 6 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-1/2 cups 2% milk

Directions

  • In a Dutch oven, cook the potatoes, carrots and celery in water until tender, about 15-20 minutes. Drain, reserving liquid and setting vegetables aside.
  • In the same pan, saute onion in butter until tender. Stir in the flour, salt and pepper; gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency. Yield: 8-10 servings (about 2-1/2 quarts).

this is such an easy recipe and delicious. I've made it several times exactly as written and sometimes have added bacon or ham and everyone loves it either way.

I love the adaptability of this soup. My daughters are vegetarians, but not the rest of the family. I put a scoop of cubed ham in the bottom of my bowl, my daughter adds Franks Hot Sauce. Everyone is satisfied.

Just had this for dinner tonight and the whole family loved it. Sprinkled some bacon and cheese on top, was awesome!

This soup has a nice, homemade taste. I adjusted the roux a little to make the soup thicker. What a good recipe. I just added crumbled bacon on top. Perfect! Nutritionally balanced too.

This is delicious! The only thing I would change is to cook the celery for a bit before adding the potatoes and carrots. The first time I made this soup the carrots and potatoes were turning into mush while the celery was still crunchy.

This was possibly one of the best dishes I've ever had! It's great to add to, like adding pieces of chicken or cheese, and so simple to make! And it tastes great even as leftovers prepped in the microwave!

My 8 year old twins can be very picky about their food. But, they ask me to make this soup at least once a week. My daughter's words, "it is delectable". As a working mother, it is very simple and quick to make. Tha taste is absolutely wonderful. This recipe, I would have to say, is my family's all time favorite.
