"These moist and fluffy pancakes give us the good grains that we need...and still taste like a treat. We love them with turkey bacon on Sunday morning."

Hearty Oatmeal Pancakes Recipe

Ingredients

  • 1 cup quick-cooking oats
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten
  • 2 cups buttermilk
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • Assorted berries, optional

Directions

  • In a large bowl, combine the first seven ingredients. In a small bowl, combine the egg, buttermilk, oil and vanilla. Stir into the dry ingredients just until moistened.
  • Pour batter by 1/4 cupful onto a hot griddle that has been coated with cooking spray. Turn when bubbles form on top; cook until the second side is golden brown. Serve with berries if desired. Yield: 4 servings.

Nutritional Analysis: One serving (3 pancakes, calculated without berries) equals 328 calories, 11 g fat (2 g saturated fat), 58 mg cholesterol, 509 mg sodium, 45 g carbohydrate, 4 g fiber, 12 g protein. Diabetic Exchanges: 2-1/2 starch, 1-1/2 fat, 1/2 reduced-fat milk.

This turned out fantabulous! I added a little water to thin it out some only to have it serve more than 4 servings. It did and they still came out fluffy...SCORE!

This is our new family favorite--my kids love the light fluffy texture and I love the fiber and health benefits of the oats and wheat flour. I make it several hours ahead of time (if we are having it for supper) or the night before to soften the oats and speed up getting the meal on the table. These are a MUST try!

I love these and so do my kids. I add flaxseed meal and wheat germ to increase the fiber even more. They make a great snack too!

These were really good! I didn't have whole wheat flour so I just used white flour so minus losing health benefits, they were great! I made them yesterday and added some dark chocolate chips and they tasted like warm chocolate chip cookies! Yum!

Great and so healthy! I added cinnamon. Options are unlimited to add flaxseed meal, apples, rasins, bananas & dried fruit. I heat & eat plain while working. Some don't like oatmeal but loved. My new pancake recipe, Healthy & so tasty. Thank you!

I made these for my father who is post surgery. He loved them and it gave him the fiber he needed. I made him two double batches so he could just heat and eat. They are fantastic!

I made these this morning and they were absolutely delicious and fluffier than i had expected. Even my dad who doesn't like wheat anything said he would like to have them again. Definitely a recipe i will make again and again. I added a little bit of cinnamon, which added a nice flavor.
