Hearty Chipotle Chicken Soup Recipe

Ingredients

  • 1 large onion, chopped
  • 1 tablespoon canola oil
  • 4 garlic cloves, minced
  • 4 cups reduced-sodium chicken broth
  • 2 cans (15 ounces each) pinto beans, rinsed and drained
  • 2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
  • 3 cups frozen corn
  • 2 chipotle peppers in adobo sauce, seeded and minced
  • 2 teaspoons adobo sauce
  • 1 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 2 cups cubed cooked chicken breast
  • 1/2 cup fat-free sour cream
  • 1/4 cup minced fresh cilantro

Directions

  • In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, beans, tomatoes, corn, chipotle peppers, adobo sauce, cumin and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
  • Stir in chicken; heat through. Garnish with sour cream; sprinkle with cilantro. Yield: 8 servings (3-1/4 quarts).

Nutritional Facts 1-2/3 cups with 1 tablespoon sour cream equals 287 calories, 4 g fat (1 g saturated fat), 29 mg cholesterol, 790 mg sodium, 42 g carbohydrate, 7 g fiber, 21 g protein. Diabetic Exchanges: 2 starch, 2 lean meat, 2 vegetable.

My family agreed that this is even better than my Chicken Tortilla Soup recipe, which we love. Even my 6 & 10 yr olds ate it up. I used 1 can of black beans instead of the pinto beans. I put the cilantro in a separate bowl for those of us who do like it. You could use diced tomatoes with green chilies if you can't find the chipotle peppers in adobo sauce or fire roasted tomatoes, but it would definitely alter that delicious smokey flavor. I agree that the adobo sauce already in the can of peppers is plenty so no need to buy extra.

This was easy to make and delicious! My husband and I both agreed that it wasn't spicy but it was flavorful. When I make it again I will probably add more childlike pepper and Adobe sauce. Served it with corn muffins and cold beer.

We loved this soup. Will definately make again. Cut back a little on the chipolte but other then that it was great. Great soup and fairly healthy

Awesome soup with kick! Was just right for me and my 19-yr old son and a bit too hot for my husband. We left out the cilantro and used leftover Christmas turkey instead of the chicken. Very simple to make and goes well with grilled cheese sandwiches. : )

I made this soup a couple months ago.

It was Soo good. I made it mine though. A lot slicer

And added little more broth. But overall best soup I've ever made. :) Also great soup to help with hangovers ...

Very good I didn't add the clinantro my Husband dosen't like it would have been better with it. Will make again.

Loved it. The recipe was great... we'll definitely make it again! One tip: just get the chipotle chilies in adobo sauce and use the sauce they are canned in rather than buy additional adobo sauce. There is plenty in the can!
