Luckily, this recipe makes a lot, since everyone is apt to want another bowl. It freezes well and makes excellent leftovers-if there is any left. Not that I'm a retired farm wife, I enjoy traveling and volunteering.

Hearty Chili Mac Recipe

Ingredients

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 can (46 ounces) tomato juice
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 celery ribs, chopped
  • 3 tablespoons brown sugar
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon pepper
  • 2 cans (16 ounces each) kidney beans, rinsed and drained
  • 1/2 cup uncooked elbow macaroni

Directions

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomatoes, celery, brown sugar, chili powder, salt, mustard and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.
  • Add the beans and macaroni; simmer 15-20 minutes longer or until macaroni is tender. Yield: 10-12 servings.

Nutritional Facts 1 serving (1 cup) equals 217 calories, 7 g fat (3 g saturated fat), 37 mg cholesterol, 809 mg sodium, 21 g carbohydrate, 4 g fiber, 18 g protein.

Very good! I purchased vegetable juice instead of tomato juice by accident and it was still good! I followed other suggestions and added about 1 cup of macaroni and only 1 can on beans! We loved it!

added garlic and more pasta. Next time will increase the chili powder a bit. My hubby and 3 kids (11,4 ad 2) all LOVED it! Prob will only add 1 can of beans next time also as the beans were a bit overkill for my personal taste!

I don't have a Dutch oven or large kettle--can this be prepared in a regular large pot? Or in the crockpot?

My boyfriend and I made this and it was really good! We had diced tomatoes w/ green chilies on hand, so we just used that, and we chose to add extra macaroni. We topped ours with a few cubes of velveta cheese and a dallop of sour cream for fun, but it was perfect by itself. I didn't even have to ask if it was a keeper, my boyfriend told me right away to add this to the "make again" list. Since this works so well as a dutch oven recipe, I can't wait to make this outside over a campfire. Thanks so much!

I made this for dinner and brought some in to work. Everyone raved about it. I did add a can of green chilies. It's a keep and will be used often this winter.

I made this for dinner but I halfed the recipe for my family of 5. Everyone loved it, even my 2 year old.My husband says "keep this recipe", so I guess he liked it alot.

made this last night and there were no leftovers. I increased the chili powder for a bit more kick and added crushed garlic plus garlic pwder. I also used half lean ground beef and half fat free ground turkey to lighten it up a bit. Very good recipe and a keeper for my household!
