Hearts of Romaine Salad with "Caesar" Dressing Recipe

Ingredients

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons cold water
  • 1 teaspoon dijon mustard
  • 1/4 teaspoons kosher salt
  • 2 ounces silken tofu
  • 1 garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon finely chopped parsley
  • 12 cups shredded romaine lettuce, about 2 hearts
  • 3 tablespoons grated Parmesan cheese

Directions

  • In food processor or blender, puree lemon juice, water, mustard, salt, tofu, and garlic until smooth.
  • While still blending, drizzle oil into mixture and continue to puree.
  • Spoon mixture into bowl, mix in parsley.
  • Add romaine hearts to large bowl, toss with dressing.
  • Top with Parmesan and serve.
