Hamburger Noodle Casserole Recipe
  • Prep: 30 min. Bake: 35 min.

Ingredients

  • 5 cups uncooked egg noodles
  • 1-1/2 pounds lean ground beef (90% lean)
  • 2 garlic cloves, minced
  • 3 cans (8 ounces each) tomato sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 package (8 ounces) reduced-fat cream cheese
  • 1 cup reduced-fat ricotta cheese
  • 1/4 cup reduced-fat sour cream
  • 3 green onions, thinly sliced, divided
  • 2/3 cup shredded reduced-fat cheddar cheese

Directions

  • Cook noodles according to package directions. Meanwhile, in a large nonstick skillet over medium heat, cook beef until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, sugar, salt and pepper; heat through. Drain noodles; stir into beef mixture.
  • In a small bowl, beat the cream cheese, ricotta cheese and sour cream until blended. Stir in half of the onions.
  • Spoon half of the noodle mixture into a 13-in. x 9-in. baking dish coated with cooking spray. Top with cheese mixture and remaining noodle mixture.
  • Cover and bake at 350° for 30 minutes. Uncover; sprinkle with cheddar cheese. Bake 5-10 minutes longer or until heated through and cheese is melted. Sprinkle with remaining onions. Yield: 10 servings.

Awesome! I added 2 lbs of ground beef as well as additional noodles. (the whole bag) Also added 2 cups of cheese on top. Added additional sugar, garlic. Also a dash of red pepper for zip.

I used ground lean turkey and whole wheat noodles giving it an even healthier twist. Very good and easy to make.

I would probably make this again, adding some yellow onions and maybe some mushrooms and seasonings with the ground beef. It wasn't anything extra special, but it was good. We enjoyed it with some fresh coleslaw with light dressing. I made it with fat-free everything (cream cheese, ricotta, sour cream, cheddar) and 1 lb. of Laura's 96% Lean Ground Sirloin, and those changes reduced the calories to 262/cup.

awesome dinner but im not a fan of onion so i used like 1/2 of one not 3 whole but whatever ur preferance its still an awesome recipe

Wow! Who new a casserole could be included in your DIET? Not me...and this one is really good too! I made it for my family and never disclosed it's healthy side to any of them. They raved about it and all had seconds! I am SOOOOO happy that I can finally get healthy, and not make my family feel tortured at the dinner table...as a matter of fact they are going to secretly be getting healther themselves!!

EXCELLENT!!!! I have a very picky family. Everyone loved it, if fact the whole dish disappeared. I didn't change anything in the recipe, it was quick and easy. Everyone wants to know when I'm going to make it again, so they will be home to eat it. Thanks great recipe, will be making it quite ofter.

My family and I really enjoyed this dish and my husband even said, "this one is a keeper!".

I was a little sceptical about the taste of the tomato sauce as I thought it was a little bland but after it baked into the rest of the noodle, cheese and meat mixture I was very pleased! I will make this again!

On a side note~ I added some sliced fresh mushrooms as I didn't have any more green onions left and wanted something more than just the noodles, meat, sauce and cheese. I think you could probably add more veggies to this meal if you wanted like a can of mexicorn or regular corn if you wanted a different twist. ☺

Delicious! It was a big hit with my family. I agree it needs to be spiced up. I used ground turkey instead of beef, added in chopped shallot, green pepper and tomato along with the garlic. I seasoned the meat mixture with Worcestershire sauce, Emeril's Essence and Italian seasoning. I added more sugar and chili powder in with the tomato sauce. I used full fat cream cheese and sour cream, part-skim ricotta. I seasoned the cheese mixture with salt and pepper also. I added Parmesan along with the cheddar and added fresh minced parsley. Don't skip the green onion! Wonderful comfort food. I served with a salad and garlic toast-will make again for sure. Leftovers were even better! Thank you!

Both Husband and 3 1/2 year old loved it! I used grd. turkey instead of beef, cottage instead of ricotta and used whole wheat penne since I didn't have egg noodles (they make whole wheat now too). Didn't have to use the whole 5 cups of penne. We don't like green onion so I eliminated that, and also the salt (tomato sauce has plenty!). I have no idea what would be "missing"! It was VERY flavorful!! I might add a layer of sliced zucchini to bump up the nutrition value (especially since its hard to get said hubby and child to eat veggies). Definately going in the recipe rotation!

It does seem to be missing something. My picky kids loved it after we mixed it all up but my unpicky husband and i did not care for it.

I made this the other night. I didn't have ricotta cheese, and I used ground turkey instead of hamburger. It sounded really good, but there wasn't much flavor. Perhaps it was because I used turkey instead of hamburger. With the leftovers I added chili powder and cumin, plus another unknown red spice I have in the cupboard. It improved the flavor soooo much. It tastes rather bland without the chili powder and cumin, which is what I used for my husband since he doesn't like hot.

For those who find the Ricotta too grainy try using cottage cheese which has been run through a processor. I have subbed this before and it works out quite well.

The cream cheese ricotta filling was heavy and sharp tasting. It didn't compliment the tomato sauce, and none of my family liked it. The texture was also grainy. The cost of ingredients is also pretty steep once you add up the ricotta and cream cheese and meat. All forms of protein which is very expensive. I won't make this again.

I too, have a hiatal hernia so, thanks for the tip about adding sugar. My husband has lots of heart burn after eating certain even slightly spicy food.We all have to be cautious what we eat.

My husband has a Hiatial Hernia & acid reflux so I also add 1 tsp of sugar to all my red sauce recipes - it really does help keep heart burn away!

Some cooks believe a little sugar cuts the acidity of tomato products.  I save sugar packets from carryout and add one to most stews, chili, soups etc.  A tsp of sugar in a dish that serves several is but a minute amount per serving and I believe it adds to the overall flavor.
