Hamburger Noodle Casserole Recipe

Ingredients

  • 5 cups uncooked yolk-free noodles
  • 1-1/4 pounds lean ground beef (90% lean)
  • 2 garlic cloves, minced
  • 3 cans (8 ounces each) tomato sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 package (8 ounces) reduced-fat cream cheese
  • 1 cup reduced-fat ricotta cheese
  • 1/4 cup fat-free sour cream
  • 3 green onions, thinly sliced, divided
  • 2/3 cup shredded reduced-fat cheddar cheese

Directions

  • Cook noodles according to package directions. Meanwhile, in a large nonstick skillet over medium heat, cook beef until no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, sugar, salt and pepper; heat through. Drain noodles; stir into beef mixture.
  • In a small bowl, beat the cream cheese, ricotta cheese and sour cream until blended. Stir in half of the onions.
  • Spoon half of the noodle mixture into a 13-in. x 9-in. baking dish coated with cooking spray. Top with cheese mixture and remaining noodle mixture.
  • Cover and bake at 350° for 30 minutes. Uncover; sprinkle with cheddar cheese. Bake 5-10 minutes longer or until heated through and cheese is melted. Sprinkle with remaining onions. Yield: 10 servings.

Nutritional Facts 1 cup equals 290 calories, 12 g fat (7 g saturated fat), 56 mg cholesterol, 650 mg sodium, 23 g carbohydrate, 2 g fiber, 22 g protein. Diabetic Exchanges: 2 lean meat, 1-1/2 starch, 1 fat.

I added a few things. I found tomato sauce in falvors Roasted Garlic & Roasted Garlic, Rosemary & Thyme. Also doubled the recipe because of the size of my family. I added fresh mushrooms and carmelized some onions. It was wonderful. Will make again. Wonderful recipe. Thanks Nancy

Easy and delicious. From our pickiest eater to our most seasoned palate... the whole family loved this! Lots of flavor. Perfect comfort food for a cold Winter weeknight meal.

I used ground turkey instead of beef. I also added more Worcestershire because we love the taste! Overall good recipe, just wish it were more filling.

Yummy! Leftovers are even better. As written, a little bland. It needs to be spiced up with more vegetables (tomato, shallot, bell pepper) and seasonings(Italian seasoning, more pepper and sugar,Worcestershire sauce,etc.) I also used full fat cream cheese and sour cream, part- skim ricotta and added Parmesan and fresh minced parsley to the top along with the cheddar(sharp and full fat) and green onions. Don't omit the green onions! I used ground turkey instead of beef.

Both Husband and 3 1/2 year old loved it! I used grd. turkey instead of beef, cottage instead of ricotta and used whole wheat penne since I didn't have egg noodles (they make whole wheat now too). Didn't have to use the whole 5 cups of penne. We don't like green onion so I eliminated that, and also the salt (tomato sauce has plenty!). I have no idea what would be "missing"! It was VERY flavorful!! I might add a layer of sliced zucchini to bump up the nutrition value (especially since its hard to get said hubby and child to eat veggies). Definately going in the recipe rotation!
