Delicious! It was a big hit with my family. I agree it needs to be spiced up. I used ground turkey instead of beef, added in chopped shallot, green pepper and tomato along with the garlic. I seasoned the meat mixture with Worcestershire sauce, Emeril's Essence and Italian seasoning. I added more sugar and chili powder in with the tomato sauce. I used full fat cream cheese and sour cream, part-skim ricotta. I seasoned the cheese mixture with salt and pepper also. I added Parmesan along with the cheddar and added fresh minced parsley. Don't skip the green onion! Wonderful comfort food. I served with a salad and garlic toast-will make again for sure. Leftovers were even better! Thank you!

Both Husband and 3 1/2 year old loved it! I used grd. turkey instead of beef, cottage instead of ricotta and used whole wheat penne since I didn't have egg noodles (they make whole wheat now too). Didn't have to use the whole 5 cups of penne. We don't like green onion so I eliminated that, and also the salt (tomato sauce has plenty!). I have no idea what would be "missing"! It was VERY flavorful!! I might add a layer of sliced zucchini to bump up the nutrition value (especially since its hard to get said hubby and child to eat veggies). Definately going in the recipe rotation!

It does seem to be missing something. My picky kids loved it after we mixed it all up but my unpicky husband and i did not care for it.

I made this the other night. I didn't have ricotta cheese, and I used ground turkey instead of hamburger. It sounded really good, but there wasn't much flavor. Perhaps it was because I used turkey instead of hamburger. With the leftovers I added chili powder and cumin, plus another unknown red spice I have in the cupboard. It improved the flavor soooo much. It tastes rather bland without the chili powder and cumin, which is what I used for my husband since he doesn't like hot.

For those who find the Ricotta too grainy try using cottage cheese which has been run through a processor. I have subbed this before and it works out quite well.mlnfromballground

The cream cheese ricotta filling was heavy and sharp tasting. It didn't compliment the tomato sauce, and none of my family liked it. The texture was also grainy. The cost of ingredients is also pretty steep once you add up the ricotta and cream cheese and meat. All forms of protein which is very expensive. I won't make this again.
