Ham with Curried Apples Recipe

Ingredients

  • 2medium apples, slice into 1/2-inch pieces
  • 2 ounces dried apricots, chopped
  • 1 tablespoon packed dark brown sugar
  • 2 tablespoons cold water
  • 1/2 teaspoons curry powder
  • 1/4 teaspoons vanilla extract
  • 1-1/2 teaspoons trans fat free margarine
  • 8 ounces sliced extra lean ham lunchmeat
  • Cooking spray
  • 8 cups low sodium vegetable broth
  • 2 cup fresh shiitake mushrooms, sliced
  • 1 cup finely chopped leeks, white parts only
  • 2 teaspoons minced fresh gingerroot
  • 2 teaspoons rice vinegar
  • 2 teaspoons low sodium soy sauce
  • 1 tablespoon mirin, optional
  • 3 ounces soba noodles
  • 2 cups chopped fresh spinach
  • 1 tablespoon miso, optional
  • 1 tablespoon chopped scallions

Directions

  • In medium saucepan, place apples, apricots, brown sugar, water, and curry and bring to boil. Reduce heat, cover, and let simmer 5 minutes, stirring occassionally.
  • Remove from heat, add vanilla and margarine, stir, cover, and let stand 5 minutes.
  • Coat skillet with cooking spray and medium high. Add ham and cook 1 to 2 minutes on each side, until it begins to brown.
  • Transfer ham to plates and serve with curried apples.
