Ham and Blue Cheese Pasta Salad Recipe

Ingredients

  • 2 cups julienned fully cooked ham
  • 1/3 cup crumbled blue or feta cheese
  • 1/3 cup minced fresh parsley
  • 1 garlic clove, minced
  • 1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
  • 1/4 teaspoon pepper
  • 6 cups (12 ounces) bow tie pasta
  • 1/3 cup olive oil
  • 1 cup coarsely chopped pecans, toasted
  • Grated Parmesan cheese

Directions

  • In a bowl, combine ham, cheese, parsley, garlic, rosemary and pepper. Cook pasta; drain. Immediately add to ham mixture and toss. Add oil and nuts; mix well. Sprinkle with Parmesan cheese. Serve immediately. Yield: 8-10 servings.

Nutritional Facts 1 serving (1 each) equals 289 calories, 20 g fat (3 g saturated fat), 18 mg cholesterol, 423 mg sodium, 19 g carbohydrate, 2 g fiber, 10 g protein.

I substitued toasted walnuts for the pecans and added a bit of sun dried tomato dressing. I had so many people asking for the recipe!
