Ham 'n' Salami Jambalaya Recipe

Ingredients

  • 2-1/2 cups water
  • 2 cups sliced celery
  • 2 cups cubed fully cooked ham
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 cup uncooked long grain rice
  • 1/4 pound thinly sliced hard salami, julienned
  • 3/4 cup chopped onion
  • 2 tablespoons butter
  • 1/2 teaspoon dried parsley flakes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon pepper
  • 2 bay leaves

Directions

  • In a Dutch oven, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice and vegetables are tender. Discard bay leaves. Yield: 8 servings.
