I found this recipe about 12 years ago when it was printed in the magazine. So glad to find it online... didn't want to dig through all of them, but this recipe is sooo worth it. Love, love, love it... Easy, versatile, everything anyone could want!

We made this with fresh eggs from our chickens. It was fantastic! Hubby wanted peppers and onions added on his half. We can't wait to make this again!

This was great, an awesome way to do omelets without having to make them all separate! I think I may have over baked my eggs but even still, it tasted good! I did half ham and cheese and the other half added green peppers, onions, and mushrooms. Next time I will saute the veggies first and cut the mushrooms smaller since it's hard to roll the fuller it is. I served this to 6 adults and 2 kids and we ate the whole thing. Hubby and I would have eaten more if there had been any! Great breakfast item for a crowd!

This turned out tasting very good! Had a hard time peeling it off the wax paper, but I should have let it cook a little bit longer. Was a good meal for dinner & the dijon mustard added good flavor!
