Parmesan PointersWhen a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

Easy meal. I would add onions next time and I just used the pepperoni I get for pizzas instead of salami. I also used real ham instead of processed deli ham to cut down on the sodium.

This recipe was super easy and very delicious. I did substitute pepperoni for the salami and used peppered ham. It gave it some nice flavors. I would even consider doing the same but use roast beef, swiss cheese, grilled onion and horseradish. Delish!

In addition to the roasted peppers, I used oil-packed sun-dried tomatoes and used that oil instead of the olive oil for extra flavor. Also, I subsituted pepperoni for the salami. These are EXCELLENT and with soup make a heart meal.

These were very good!! I didn't have the right size tortillas so I had some trouble rolling them up. Will definitely use the 10" tortillas next time.
