Halibut with Charmoula Recipe

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoons salt, to taste, optional
  • 1/2 teaspoons ground cumin
  • 1/2 teaspoons black pepper
  • 2 garlic cloves
  • 1 cup loosely packed chopped parsley
  • 1 cup loosely packed fresh cilantro
  • 2 tablespoons capers
  • 2 teaspoons grated lemon rind
  • 1/4 cup fresh lemon juice
  • 1 lb raw halibut fillets, 4 pieces, 1-inch thick
  • Pinch salt, to taste, optional
  • Pinch black pepper
  • Cooking spray
  • 1 parsley sprig, optional

Directions

  • Preheat oven to 350°F.
  • In food processor or blender, process oil, paprika, salt, cumin, pepper, and garlic until chopped.
  • Add parsley, cilantro, capers, lemon rind, and lemon juice. Process until chopped. Set aside.
  • Line baking pan with foil and coat with cooking spray.
  • Season halibut with salt and pepper. Place in pan.
  • Bake for 15 minutes, until flaky.
  • Spoon sauce over halibut, garnish with parsley sprigs. Serve.
