Halibut Fillets with Pineapple Recipe
  • Prep: 30 min. Cook: 10 min.
  • Yield: 2 Servings

Ingredients

  • 10 ounces canned pineapple slices
  • 1 garlic cloves, minced
  • 2 teaspoons minced fresh gingerroot
  • 1/2 teaspoons ground cumin
  • 1/8 teaspoons hot red pepper flakes
  • 2-5ounces raw halibut fillets

Directions

  • Drain pineapple and pour juice into glass baking dish.
  • Add garlic, ginger, cumin, and red pepper flakes. Place fillets in juice and turn to coat both sides.
  • Cover and refrigerate 20 to 30 minutes.
  • Preheat grill to medium.
  • Place fillets on grill, discard marinade. Cook fillets 5 minutes.
  • Turn fillets. Add pineapple slices to grill. Cook additional 5 minutes.
  • Turn pineapple slices over once.
  • Remove fish to serving platter and arrange pineapple slices on top.
