Grouper with Red Pepper Sauce Recipe

Ingredients

  • Mazola cooking spray
  • 2 grouper fillets (4 ounces each) 1/2 to 1 inch thick
  • 1/2 cup chopped red bell peppers
  • 1-1/2 teaspoons margarine or butter
  • 1 medium tomatoes, peeled, seeded, and chopped
  • 1-1/2 teaspoons sugar
  • 1-1/2 teaspoons red wine vinegar
  • 1/8 teaspoons salt
  • Pinch garlic powder
  • Pinch ground red pepper (cayenne)
  • 1 tablespoon fresh lemon juice
  • 1-1/2 teaspoons olive oil
  • 1/8 teaspoons dried rosemary, crushed

Directions

  • In small saucepan, melt margarine over medium. Add peppers and cook until tender. Stir in tomato, sugar, vinegar, salt, garlic powder, and ground red pepper.
  • Cook 5 more minutes, stirring occasionally. Cool slightly.
  • In blender, place sauce and blend until smooth. Return to saucepan, cover, and keep warm.
  • Preheat grill to medium.
  • Rinse fish, pat dry with paper towels.
  • In small bowl, combine lemon juice, olive oil, and rosemary. Brush both sides of fish with lemon mixture.
  • Coat grill basket with cooking spray. Place fish in basket, tucking under any thin edges. Place basket on rack of uncovered grill directly over heat.
  • Grill 4 minutes per side, until fish flakes easily when tested with a fork, turning basket once.
  • Transfer fish to serving platter and serve with sauce.
