Grouper with Mango Salsa Recipe

Ingredients

  • 1-1/2 cup finely chopped fresh mango
  • 1/2 cup sliced red bell peppers
  • 1/3 cup finely chopped red onion
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoons salt, divided
  • 1 lb grouper fillets
  • 1/4 teaspoons cayenne pepper
  • Cooking spray
  • Pinch fresh cilantro

Directions

  • Preheat oven to 425°F.
  • In small bowl, combine mango, sweet red pepper, onion, chopped cilantro, lime juice, and 1/4 teaspoon salt. Toss well to combine. Set aside or chill.
  • Coat 11-inch x 7-inch x 1-1/2-inch baking dish with cooking spray.
  • Sprinkle fillets evenly with remaining 1/4 teaspoon salt and ground red pepper, arrange in baking dish.
  • Bake 20 minutes or until fish flakes easily with fork.
  • Serve with mango salsa. Garnish with cilantro sprigs, if desired.
