Grilled Shrimp with Cilantro Dipping Sauce Recipe
  • Prep: 25 min. + marinating Grill: 5 min.

Ingredients

  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon minced fresh chives
  • 1 garlic clove, minced
  • 1 pound uncooked medium shrimp, peeled and deveined
  • DIPPING SAUCE:
  • 1 cup fresh cilantro leaves
  • 1 cup fat-free mayonnaise
  • 1 jalapeno pepper, seeded
  • 1 garlic clove, peeled
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • Dash cayenne pepper

Directions

  • In a large resealable plastic bag, combine the cilantro, oil, chives and garlic. Add the shrimp; seal bag and turn to coat. Cover and refrigerate for 1 hour.
  • In a blender, combine the sauce ingredients; cover and process until blended. Chill until serving.
  • Thread shrimp onto four metal or soaked wooden skewers. Grill, covered, over medium heat for 2-3 minutes on each side or until shrimp turn pink. Serve with sauce. Yield: 4 servings.

Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

Nutritional Facts 1 skewer with 1/4 cup sauce equals 208 calories, 10 g fat (2 g saturated fat), 144 mg cholesterol, 615 mg sodium, 11 g carbohydrate, 1 g fiber, 19 g protein.

This is really tasty. My whole family loved it. I added some lime juice to the marinade. Served over a bed of orzo.

The sauce really made this recipe. Fabulous! Marinade was ok but probably any marinade/seasoning would work for the shrimp. Definitely an abundance of sauce. Next time will half sauce or double the shrimp.

Makes a tasty and healthy dinner. The cilantro was a little overwhelming, so I'm going to tone it down the next time I make this. Served with a salad and coconut rice.

I've made this recipe twice and it has been fabulous both times. It's quick, easy, and oh so tasty! My entire family enjoys this one! The cilantro dipping sauce is ever so yummy and it tastes great over eggs the next morning for breakfast and also makes a great salad dressing. This recipe is a keeper!

I made this recipe earlier this week. I didn't have any shrimp so I used chicken breast cut into bite size bits. Simply delicious. I just love the dip. Great with vegies (try it with roasted vegies).

I made this for a family get together and it was a huge hit! There was a ton of sauce left over so we scrounged around and found some tortilla chips to finish it off. I've made just the sauce and used it for a great low carb veggie dip and also used it on shrimp and chicken soft tacos with some rice and black beans. The cilantro dipping sauce is definitely the star of this recipe!

This was fabulous! There's just enough "kick" in the dipping sauce. The sauce is great with raw vegies, too. We used larger shrimp (Jumbo: 16-20 per pound and 4-5 per serving)
