Grilled Apple Pecan Cups Recipe

Ingredients

  • 1 teaspoon all natural agave nectar
  • 2 small apples
  • 4 teaspoons butter, softened
  • 3 tablespoons chopped pecans
  • Sugar substitute equivalent to 1 tablespoon brown sugar
  • Cooking spray

Directions

  • Peel and cut apples in half crosswise. Scoop core out of center, leaving top and bottom of apple in tact.
  • In small bowl, blend softened butter and agave nectar.
  • In center of each apple half, place one teaspoon of butter-agave mixture.
  • Sprinkle chopped pecans, dividing equally, into each center. Dust apples with brown sugar substitute.
  • Coat grill with cooking spray and preheat to medium.
  • Place apples on grill and cook for 6-8 minutes, or until tender and warm. Watch closely to avoid burning.

Nutritional Facts 1 serving equals 129 calories, 8 g fat (3 g saturated fat), 32 mg sodium, 15 g carbohydrate, 1 g protein. Diabetic Exchanges: 1-1/2 fat, 3/4 fruit.

The picture doesn't look like it was made following the directions, as it looks like a whole apple, and not grilled. Would like to see how it looks halved and grilled.
