Ingredients

  • 1/2 cup mayonnaise
  • 1 teaspoon dijon mustard
  • 1 teaspoon vinegar
  • 1/8 teaspoons salt
  • 1/8 teaspoons black pepper
  • 32 ounces frozen baby peas, thawed
  • 1 medium onion, finely chopped
  • 3 large hard-boiled eggs, chopped
  • 1 teaspoon chopped parsley

Directions

  • Mix together mayonnaise, mustard, vinegar, salt, and pepper to make dressing.
  • In separate bowl, combine peas, onion, and egg, then stir in dressing.
  • Keep refrigerated until ready to serve. Garnish with parsley.
