Green 'n' Gold Egg Bake Recipe

Ingredients

  • 1 cup seasoned bread crumbs, divided
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
  • 3 cups (24 ounces) 4% cottage cheese
  • 1/2 cup grated Romano or Parmesan cheese
  • 5 eggs

Directions

  • Sprinkle 1/4 cup bread crumbs into a greased 8-in. square baking dish. Bake at 350° for 3-5 minutes or until golden brown.
  • Meanwhile, in a large bowl, combine the spinach, cottage cheese, Romano cheese, three eggs and remaining crumbs. Spread over the baked crumbs. Beat remaining eggs; pour over spinach mixture.
  • Bake, uncovered, at 350° for 45 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before serving. Yield: 9 servings.

Nutritional Analysis: One 1/2-cup serving (prepared with fat-free cottage cheese and egg substitute) equals 181 calories, 6 g fat (2 g saturated fat), 127 mg cholesterol, 808 g sodium, 15 g carbohydrate, 2 g fiber, 18 g protein. Diabetic Exchanges: 2 lean meat, 1 starch.

I would just make it next tome with one package of spinach, and a couple more eggs. In my 1st try I also added a small can of mushrooms. Otherwise it was easy to make.

Easy and good--anyone who only cooked it for 15 minutes needs to read the recipe again because it says 45 minutes!

Tried this today and it's great. Bake in a 8X9" and it would bake faster in the center. Used crushed croutons instead of bread crumbs.

Took way more than 15 minutes, plus all the time in the store to find the items, cheese not found. Then, went home to fix it. No time to really thaw, but still ok. 8 x 8 pan ok. Why not 8 x 12 or so for quicker baking time. However, all that my interpretation. Mainly, great ingredient list, but no calorie report. Only if fat free cottage cheese and egg substitute, which I was going to buy, as well as I forgot ff because I was looking at the regular ingredients. So where is the calorie count for the ingredients list? It is quite rich, so I will use a small amount with each following meal. Thanks for an interesting recipe. Review this for yourselves, please.
