Greek Chicken Pasta Recipe

Ingredients

  • 2 cups uncooked penne pasta
  • 1/4 cup butter, cubed
  • 1 large onion, chopped
  • 1/4 cup all-purpose flour
  • 1 can (14-1/2 ounces) reduced-sodium chicken broth
  • 3 cups shredded rotisserie chicken
  • 1 jar (7-1/2 ounces) marinated quartered artichoke hearts, drained
  • 1 cup (4 ounces) crumbled feta cheese
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1/3 cup sliced pitted Greek olives
  • 2 tablespoons minced fresh parsley

Directions

  • Cook pasta according to package directions.
  • Meanwhile, in a large ovenproof skillet, melt butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the chicken, artichoke hearts, cheese, tomatoes and olives.
  • Drain pasta; stir into the pan. Broil 3-4 in. from the heat for 5-7 minutes or until bubbly and golden brown. Sprinkle with parsley. Yield: 5 servings.

Nutritional Facts 1-1/3 cups equals 556 calories, 30 g fat (12 g saturated fat), 111 mg cholesterol, 916 mg sodium, 36 g carbohydrate, 3 g fiber, 35 g protein.

The History of Feta

FETA is a white, salty, semi-firm cheese. Traditionally it was made from sheep or goat's milk but is now also made with cow's milk. After feta is formed in a special mold, it's sliced into large pieces, salted and soaked in brine. Although feta cheese is mostly associated with Greek cooking, "feta" comes from the Italian word "fette", meaning slice of food.

Loved it! We're not fans of artichoke, so I substituted small pieces of blanched thin asparagus!

I also had a pound of boneless/skinless chicken breast in the fridge, so pre-cooked it in a Rosemary/Garlic seasoning.

Hubby and I LOVED it - promptly inhaled :D

I am a subscriber to Taste of home and I tried this recipe and my family loved it. I don't like greek olives, but used black olives instead. My mom has moved in due to health issues and threw my book away that had the recipe in it and I am so glad I could go on line and find it. This is a great dish.

This was DELICIOUS! I didn't chop up the tomatoes well enough, and ended up with big, too-flavorful bites of tomato, so be sure to chop it before you mix it in.

I left out the olives, and it still turned out great. Be sure to chop up the artichoke and sun dried tomatoes really well, and use a big pot!

Lots of taste and really easy to make. Everyone in my family enjoyed this recipe (even with the tomatoes and artichoke hearts in it, usually not their favorites). I did not use the olives and I used boiled chicken breasts instead. Will make this one again!

My family loves this recipe.....however I do not use the store bought chicken...I know the idea is for a quick meal however I boiled chicken breasts with the bone in and then I chop up the chicken because it is so much more moist and tender...delicious

We love this recipe, however I do no use rotisserie chicken... I realize the idea is quick but I boil chicken breasts w/bone and chop off the bone as more moist and flavorable.....delicious.

We LOVE this recipe and we make it over and over. It's all about the Quality of the ingredients you buy. You will have to spend a little more but it's so worth it. We really like using the smoked sundried tomatoes instead of the oil packed and we use the herb feta. Tons of flavor and is even better the next day for lunch!

This recipe was super simple and great tasting. We DO NOT do onions, so I omitted those. Also, we just baked some boneless chicken breasts with italian seasoning and chopped that into cubes. My husband and I loved it and we will be making it over and over again!

I am so glad I found this recipe again!! I made it last summer (2010) and the whole family raved about it! My youngest (15) has been asking me to make it again, but I misplaced the magazine I got it out of and, couldn't remember which one it was!! This is a great meal and is one of those that tastes even better the second day!

Yummm! The only two tiny things I did different was grill boneless breasts sprinkled with this seasoning http://allrecipes.com//Recipe/greek-seasoning/Detail.aspx and I didn't have feta. Loved it!

This was pretty good in spite of the smell of it. It wasn't hard to put together and did have a lot of flavor. I'm not sure it was for me though - I left out the olives and replaced the sun dried tomatoes with regular tomatoes and also used seasoned baked chicken breast instead of the rotisserie chicken.

Pretty tasty! I added some spinach to it which may have made it less "saucy" than it normally would have been, but it was still really good. Gotta love the sun-dried tomato, artichoke heart, feta and olive combo. My sweetie doesn't like olives so i left them out of the dish, and just sprinkled them on top of mine. I also added a few of cloves of garlic, and I would probably season it a little more next time. Obviously no salt is needed with the feta and olives, but probably some black pepper, maybe some greek seasoning. Definitely a keeper!

I unfortunately did not think this was as wonderful as the other reviews. It was lacking in flavor. We added crushed red pepper, oregano, and other seasonings. Still wasn't enough. I think I might try it again with either a dash of nutmeg or balsamic vinegar. My husband and I have been cooking for 25 years and it was just lacking in flavor.

This was fairly easy, and a break out of my normal routine. I love all those yummy greek things, olives, arti hearts, feta, tomatoes, my husband, typically not. But this recipe he loved, it was his favorite dinner all week!

I made this for my family, everyone loved it! I added a clove of crushed garlic (could use a teaspoon of minced) with the onions. Didn't have olives and used dried parsley instead of fresh, yet it was still excellent. New favorite!

This was SO good! I too omitted the black olives. The artichokes gave this dish such a refreshing flavor. My Husband who "thought" he didn't like artichokes loved this too.

This was wonderful! Even my husband liked it. I was skeptical after mixing it all together, but broiling it is what made it excellent. Will make many more times.

This recipe is easy and delicious! I also skipped broiling it, instead I put it in a 9x13 and let it sit in the oven for about 20 minutes. I used sliced black olives instead of the green ones. I also won't use the sun-dried tomatoes, hubby isn't a fan. Even with all the changes, this recipe is great and will last us all week!

This recipe is FABULOUS! It tastes like something I ordered at a high end restaurant! I did not include the greek olives and baked boneless skinless chicken breasts in Italian dressing and then cubed for the recipe. I even cut the butter down a bit and it was still amazing. This recipe is a BIG TIME keeper! THANK YOU!
