I can remember my Grandma Wheeler making these delicious muffins—we'd eat them nice and warm, fresh from the oven! She was a "pinch of this" and "handful of that" kind of cook, so getting the ingredient amounts correct for the recipe was a challenge. Now it's a family treasure! —Darlis A. Grandma's Honey Muffins Recipe
  • Prep/Total Time: 30 min.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup 2% milk
  • 1/4 cup butter, melted
  • 1/4 cup honey

Directions

  • In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the egg, milk, butter and honey. Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Remove from pan to a wire rack. Serve warm. Yield: 1 dozen.

Nutritional Facts 1 serving (1 each) equals 182 calories, 5 g fat (3 g saturated fat), 31 mg cholesterol, 253 mg sodium, 31 g carbohydrate, 1 g fiber, 3 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

These were very good. Served them with homemade Cinnamon/Honey Butter. (1 stick softened butter, 3 Tbl. honey, 1/4 tsp. ground cinnamon and 1/8 tsp. salt)

I thought these sounded good so this morning I decided to make a batch for breakfast. The only thing I did different was I used Splenda instead of white sugar. They are AWESOME! Just a simple subtle honey taste. My husband and young daughter loved them. Thank you for sharing!

These were the simple muffins I've ever made! They were excellent straight out of the oven. They reminded us of the cornbread at Montana's. They were perfect with the chili we had for supper....more like a savory treat than a sweet one.

Made these yesterday with the addition of finely grated orange peel in the batter and dipped the tops into an orange juice/powdered sugar glaze. I think they would have been bland (see moogette's comment) without the orange and glaze boost.

I made these muffins this morning and my husband and I both ate two right out of the oven. They are simply delicious! I did add about 1 tablespoon of grated fresh orange peel. It was enough to just give a hint of orange flavor. Next time I may add more orange peel. Lemon peel would also be good. Thank you for the recipe!

This recipe got such great reviews that I decided to make a batch immediately. I followed recipe exactly, they looked good coming out of the oven, but they struck my as rather bland. Not sure what I could add to kick up the flavor. Any suggestions?

These are simply excellent muffins, and so quick and easy. Not too sweet with a meal, and for breakfast or desert I whip up a little honey butter to sweeten them up. So good... For the holidays I added nuts and dried cranberries and they were perfect to replace the usual dinner rolls.

I have used this recipe using oil in place of melted butter and chocolate chips in place of honey and they have been a hit in our home each time they have been made.

I made these with one addition, matcha (green tea powder). I added 1 Tbsp of matcha to the dry ingredients to make these green tea & honey muffins.I had to stop myself from eating the whole batch when they came out if the oven.

My son and I made these together and they are absolutely delicious. One of the simplest recipes for muffins that I have ever used. We are using them as dessert . We will be making these again.

So good! These muffins are so simple yet so great!! They are the perfect accompaniment to any meal and are so moist and not overly sweet. You do not even need extra butter! I will definitely be making these again- so yummy!!

I'm 8 months pregnant & NEEDED something sweet the other night. I'd been eyeing these muffins for a while in the ToH 2009 Holiday magazine for a while. They were quick & easy, which was a huge plus at a bit past midnight, and they came out AMAZING. My hubby tried to be strong & not eat anything so late, but caved after seeing my reaction. After one bite, we both fell in love. These are definitely a household favorite & will be made again many times. :D

These were pretty good. Unfortunately, my brother didn't care much for them. I thought they were good though. They were sort of gooey on the inside, but they tested done. They had a nice buttery flavor. They made a bit more than a dozen muffins.

This is the best muffin recipe. They always turn out just right, not too moist and soggy not too dry. I have even done 1 cup whole wheat flour with the 1 cup white and added some bran and they still turned out good and added raisins and spices. This is the best muffin recipe.

Really good muffins. Not too sweet or too bland, just perfect. They slightly remind me of cornbread, but are so light and fluffy that they really can't compare. Definitely going to be a family favorite!

My family loves these muffins! I always make a double batch. We love to cut a small pocket in the side of them and insert a small pat of butter while they're still hot-mmmm delicious!
