Gooey Butterscotch Bars Recipe

Ingredients

  • 1 package (17-1/2 ounces) sugar cookie mix
  • 1 package (3.4 ounces) instant butterscotch pudding mix
  • 1/2 cup butter, softened
  • 1 egg
  • 14 ounces caramels
  • 1/2 cup evaporated milk
  • 2 cups mixed nuts
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Directions

  • In a large bowl, combine the sugar cookie mix, pudding mix, butter and egg. Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until set.
  • In a large saucepan, combine caramels and milk. Cook and stir over medium-low heat until melted. Remove from the heat. Stir in nuts and vanilla. Pour over crust. Sprinkle with butterscotch chips.
  • Cool completely. Cut into bars. Store in an airtight container. Yield: about 3 dozen.

A huge hit with my family and my teenage son's friends! Easy, delicious. I used cashews instead of mixed nuts, but that was the only change I made. Love these bars!

I made my own sugar cookie dough for this recipe and just added the pudding, etc. These are so yummy! My family had them devoured in a day! Thanks for sharing this!

Our family loves these -- I use roasted peanuts. Sometimes I add some mini marshmellows on top of the cookie layer and then pour the caramel mixture over it to make more of a "salted nut roll" type bar.

I used vanilla pudding to balance out the butterscotch power of the chips which enabled me to add a few extra. I exchanged the macadamia nuts for the mixed nuts, and they were an awesome complement to the other flavors.

My son has a peanut allergy so I used rice chex in place of the nuts. It was good but I think if I make it again I will not add the butterscotch chips on top it made it a little too sweet.

Made for meeting at school. They loved them. For those that butterscotch is not there favorite, I decided to change a few ingredients. I used vanilla pudding in with the sugar cookie mix, then put vanilla and milk chocolate chips and pecans.on top of the carmel layer. Then to make everyone happy I put half butterscotch chips and then then other chocolate/vanilla on the other! Two deserts in one!

I can see me making these at the holidays, and subbing salted macadamia nuts for the mixed nuts. My sister, especially, will love them - macadamias are her favourites, and we cook with them only at the holidays, to make them more special.

These are sweet! Mine came out just like the picture. Didn't have a sugar cookie mix so I used a yellow cake mix, 1 pkg instant butterscotch pudding, 1/2 cup of butter and one egg. Mix until crumbly, add chopped Butterfinger candy bars, press into pan and bake for 20-22 mins. Also didn't have caramels on hand so I made caramel sauce. It worked well. I agree these didn't pack well into lunches because of the "Gooeyness". They did freeze well for me. I loved them.

I made this to take to a Boy Scout family picnic. Everybody wanted the recipe, it was delicious. I used dry roasted peanuts instead of mixed nuts, so it would have more of a sweet & salty taste. I also used half butterscotch chips and half milk chocolate chips on top. Next time I might try all milk chocolate. AWESOME bars!!!

I would make this recipe again. It was very good, but the cookie part was a little drier than I had anticipated. More butter, maybe?

In a word---WOW! Very easy to make. A great recipe to do with young cooks. They are delicious and VERY gooey (even several days later). "Gooey" made them difficult to put in lunch boxes, but we compromised and just enjoyed them at home. :)

The recipe was very simple. I used more milk when melting the caramel bits. At first, I thought it was too sweet, but my friends thought otherwise. I also used walnuts instead of mixed nuts.
