Gingered Mango Salsa Recipe
  • Prep: 15 min. + standing
  • Yield: 5 Servings

Ingredients

  • 1 cup chopped peeled mango
  • 1/4 cup chopped red onion
  • 1/4 cup minced fresh cilantro
  • 1/4 cup lime juice
  • 2 tablespoons minced fresh mint
  • 1 tablespoon minced fresh gingerroot
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon salt

Directions

  • In a bowl, combine all ingredients. Let stand for 30 minutes before serving. Yield: 1-1/4 cups.

Nutritional Analysis: 1/4 cup equals 39 calories, 1 g fat (trace saturated fat), 0 cholesterol, 120 mg sodium, 9 g carbohydrate, 1 g fiber, trace protein. Diabetic Exchange: 1/2 fruit.
