Ginger and Summer Squash Recipe

Ingredients

  • 1 tablespoon olive oil
  • 2 cups 1/4 inch thick summer squash slices, about 6 small
  • 1-1/2 teaspoons minced fresh gingerroot
  • 4 medium garlic cloves, crushed
  • 8 medium tomatoes, seeded, and chopped
  • 1 teaspoon grated Parmesan cheese
  • 1/2 teaspoons salt
  • Pinch black pepper

Directions

  • Add oil to large nonstick frying pan. Preheat to medium.
  • Add squash, ginger, and garlic. Cook until squash is soft, stirring frequently.
  • Add tomato and continue to cook, stirring frequently until squash is transparent.
  • Stir in Parmesan, salt, and pepper and serve.
