I buy crtstallized ginger at Penzey's, which is also available on line. A great customer service oriented business and American too! Trader joe's has good prices on bags. You could probably also find it in the spice section of larger grocery stores, I know I've seen both bags and jars of it.

I've already made 3 of these this holiday season. This pie is easy and delicious. Even a non-pumpkin pie lover will love this pie. The streusel topping makes it special!

This pie is fantastic. Over the top, really. I did have to bake it much longer than the recipe calls for. To accommodate, I placed a foil tent over the pie so the streusel topping wouldn't burn. Allow yourself an extra hour for baking, just in case.
