Garlic and Mint Chicken Recipe

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 g fresh mint
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon low sodium soy sauce
  • 4 garlic cloves
  • 1 teaspoon chili powder
  • 1/4 teaspoons black pepper
  • 1 cup couscous, cooked, optional
  • 1 green onion, grilled, optional
  • 1 ounces fresh mint, optional

Directions

  • Place chicken in a resealable plastic bag set in a shallow dish.
  • In blender, puree mint leaves, lemon juice, oil, soy sauce, garlic, chili powder, and pepper.
  • Pour over chicken. Seal bag and turn to coat chicken. Marinate in refrigerator 4 to 24 hours.
  • Preheat grill to medium.
  • Remove chicken and place chicken on the rack of uncovered grill. Discard marinade.
  • Grill 12 to 15 minutes or until tender and juices run clear. Turn once.
  • If desired, serve over hot cooked couscous, or with grilled green onions and garnish with additional mint leaves.
