Garlic Lover's Chicken Recipe

Ingredients

  • 1/2 cup dry bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon salt, optional
  • 1/8 teaspoon pepper
  • 1/4 cup milk
  • 6 boneless skinless chicken breast halves (1-1/2 pounds)
  • 1 to 2 garlic cloves, minced
  • 1/4 cup butter, melted
  • 2 tablespoons lemon juice
  • Paprika

Directions

  • In a large resealable plastic bag, combine the bread crumbs, cheese, parsley, salt if desired and pepper. Place milk in a shallow bowl. Dip chicken in milk, then shake in the crumb mixture.
  • Place chicken in a greased 13-in. x 9-in. baking dish. Combine the butter, garlic and lemon juice; drizzle over the chicken. Sprinkle with paprika.
  • Bake, uncovered, at 350° for 25-30 minutes or until a meat thermometer reads 170°. Yield: 6 servings.

Nutritional Facts 1 serving (prepared with nonfat Parmesan cheese topping, fat-free milk and reduced-fat margarine and without salt) equals 234 calories, 8 g fat (0 saturated fat), 75 mg cholesterol, 331 mg sodium, 8 g carbohydrate, 0 fiber, 30 g protein. Diabetic Exchanges: 3 lean meat, 1 fat, 1/2 starch.

My family absolutely loves this recipe I've made it 3 times already. More garlic is good but too much lemon juice is over doing it.

This recipe was excellent! My husband usually doesnt like boneless chicken breast because it can get dried out but this was moist and flavorful! I would totally make it again!

Excellent! I soak my chicken in buttermilk for a few hours prior, makes the chicken extra moist. Then just pull the chicken out of the buttermilk and shake in the bread crumb mixture.

I do not know what it is but the garlic seems to make the chicken moist. I have another chicken/garlic recipe that is also moist. This is easy and we love the flavor. I always have a jar of minced garlic in the frig. and I used 2 t.

this is so darn good. my family and i are over the moon for garlic so i have to be honest and say that i double the garlic cloves! its very flavorful and on the healthier side.

I've been making this recipe for years and years! One of my family's favorites! The only thing I do differently from the way the recipe is written is to add double the amount of garlic called for.
