Garlic Infused Pork Loin Recipe

Ingredients

  • 2-1/4 lb rolled boneless top loin pork roast
  • 1 tablespoon vinegar
  • 2 garlic cloves, thinly sliced
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper
  • Cooking spray
  • 1 tablespoon fresh sage, as desired
  • 1 tablespoon fresh oregano, as desired
  • 1 tablespoon fresh rosemary, as desired

Directions

  • Preheat oven to 350°F.
  • Spread roast onto cutting board and remove any excess fat.
  • Roll roast into a long cylinder and tie together with twine, at 1-inch intervals.
  • Massage roast with vinegar. Slice numerous 1-inch-deep pockets into surface and fill slits with garlic slices. Season with salt and pepper.
  • Lightly coat baking pan with cooking spray, place pork on pan and bake 2 hours, or until meat thermometer reads 180°F.
  • Sprinkle herbs over roast and serve.
