Ingredients

  • 1 pound fresh green beans, trimmed
  • 1/4 cup water
  • 1 tablespoon butter, melted
  • 3 garlic cloves, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup minced fresh parsley

Directions

  • Place beans and water in a 2-qt. microwave-safe dish. Cover and microwave on high for 4-5 minute. Pour over beans; toss to coat. Stir in parsley. Yield: 4 servings.

Nutritional Analysis: One serving (3/4 cup) equals 66 calories, 3 g fat (2 g saturated fat), 8 mg cholesterol, 113 mg sodium, 9 g carbohydrate, 4 g fiber, 2 g protein. Diabetic Exchanges: 2 vegetable, 1/2 fat.
