What a great recipe and simple to make. I did leave out the jalapeno peppers and still felt it had enough of a tang to it. I have made this a few times this summer------sooooo good !!!!!

My husband has made this twice now (and he id NOT a cook). This time it's much better than the last (Lord only knows what he did then - this time he had my help). I peeled the tomatos (drop them in boiling water for about 45 seconds and they peel very easy), we used all red onions, lime juice instead of lemon, skipped the vinegar and oil as others had suggested and also substituted cilantro for the cumin, used ground pepper instead on cayenne and added 2 teaspoons sugar to cut the acid in the tomato. It's fabulous.......

This had a really good flavor. I liked that I had all the ingredients on hand, including fresh tomatoes from the garden. I have to say I prefer store-bought salsa, although I may blend this salsa so it isn't as chunky and see if I like that better.

I only made a couple additions...3 tbls of cilantro and 1 tbls of tomato paste. The cilantro add a layer of freshness and the tomato paste gives a richness to it. Other than that....absolutely awesome recipe!

Take the recipe from good to better by taking out the oil, vinegar and cumin. Add fresh cilantro (to taste - 1/3 cup chopped) and fresh lime juice.
Take out the cumin, oil, and vinegar (yuck). Add fresh cilantro and freshly squeezed lime juice. Red/Purple onion is also a nice alternative, not as punjunt.

A question for "itsallofhim". How much cilantro did you add to this recipe?
