  • Prep: 10 min. Bake: 10 min./batch + cooling

Ingredients

  • 1 package (18-1/4 ounces) devil's food cake mix
  • 1/2 cup butter, softened
  • 1 tablespoon water
  • 2 eggs
  • 2 tablespoons confectioners' sugar
  • 2 packages (5 ounces each) chocolate-covered thin mints

Directions

  • In a large bowl, combine the cake mix, butter and water. Add eggs; mix well. Shape into 1-in. balls; roll in confectioners' sugar. Place 2 in. apart on ungreased baking sheets.
  • Bake at 375° for 8-10 minutes or until set. Immediately press a mint into the center of each cookie. Cool for 2 minutes before removing to wire racks to cool completely. Yield: about 3 dozen.

These cookies are great to take for a cookie exchange because they bake up really quick and they are different from other Christmas cookies. My son, has loved chocolate mint since he was tiny, and he likes these cookies the best. He is studying abroad in Germany, and for Christmas I wanted to send him a "care package" of cookies. I asked him to pick 3 of his favorites to send, and of course this was one of them! Quick, easy and delicious!

These turned out exactly as pictured. Very easy to make and will look so nice with other holiday cookies! Will definately make again!
