Fruited Chicken Salad

4 cups cubed cooked chicken breast
1 can (8 ounces) unsweetened crushed pineapple, drained
1/2 cup diced celery
1/2 cup diced red onion
1/2 cup golden raisins
1/2 cup chopped dates
DRESSING:
3/4 cup fat-free salad dressing
1/2 cup reduced-fat sour cream
2 teaspoons lemon juice
1 teaspoon ground mustard
1/4 teaspoon garlic powder
1/8 teaspoon pepper
6 lettuce leaves

In a large bowl, combine the chicken, pineapple, celery, onion, raisins and dates.
In another bowl, combine the salad dressing, sour cream, lemon juice, mustard,
garlic powder and pepper. Pour over chicken mixture; toss to coat. Serve on a
lettuce leaf.

Yield: 6 servings.
