I made this for my boyfriend's birthday breakfast in bed, and he thought it was probably the best breakfast he's ever had. I'm definitely going to make it more often. It has everything he loves in it. Super easy and fast too.

I just loved this recipe! The tortilla seasoned with the cinnamon and nutmeg was a great binder to the goodies inside!
