Frozen Pistachio Dessert with Raspberry Sauce Recipe
  • Prep: 35 min. + freezing
  • Yield: 12 Servings
25 10 35

Ingredients

  • 1-1/2 cups crushed vanilla wafers (about 45 wafers)
  • 1/4 cup finely chopped pistachios
  • 1/4 cup reduced-fat butter, melted
  • 1-1/4 cups fat-free milk
  • 1 package (1 ounce) sugar-free instant pistachio pudding mix
  • 6 ounces reduced-fat cream cheese
  • 1 carton (8 ounces) frozen fat-free whipped topping, thawed, divided
  • 1 package (12 ounces) frozen unsweetened raspberries, thawed
  • 2 tablespoons sugar
  • 2 tablespoons orange liqueur or orange juice
  • 2 tablespoons chopped pistachios

Directions

  • In a small bowl, combine the wafers, finely chopped pistachios and butter. Press onto the bottom of a 9-in. springform pan coated with cooking spray. Place pan on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack.
  • Meanwhile, in a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a large bowl, beat cream cheese until smooth. Beat in the pudding.
  • Set aside 3/4 cup whipped topping for garnish; fold remaining whipped topping into cream cheese mixture. Pour filling over crust. Freeze for 5 hours or overnight. Cover and refrigerate remaining whipped topping.
  • For sauce, place the raspberries, sugar and liqueur in a food processor. Cover and process for 1-2 minutes or until smooth. Strain and discard seeds and pulp. Refrigerate until serving.
  • Remove dessert from the freezer 15 minutes before serving. Remove sides of pan. Garnish with chopped pistachios and remaining whipped topping. Serve with sauce. Yield: 12 servings.

Tip

Purchasing Pistachios

When buying unshelled pistachios, look for ones with the shell partially open so it's easier to retrieve the nut. Also, a closed shell indicates an immature nut.

9 grams of fat for a dessert is not too much for the average, healthy, person - if it fits into a healthful lifestyle. Fat free whipped cream can not and does not contain hydrogenated fat- it wouldn't be fat free if it contained hydrogenated fat. Pistachios are a very healthy source of fat, and have been proven to have a cholesterol-lowering effect. It is a dessert, and it is delicious. I'm a registered and licensed dietitian in the state of PA, and I give it one and a half thumbs up. If only all of my clients would eat more foods like this and less regular cheesecake, etc. Moderation, balance, and variety - it can't be said enough.

Healthy or not, we're all going to die of 'something' someday! We've all just got to limit our selves sometimes. I love the response of how many pieces the one person ate! You go girl! I'm with you! This recipe sounds great, and I'm sure it'll become a family favorite! I'll make it for a family reunion the end of the month again! :)

We really enjoyed this dessert. I used low fat graham crackers and only 3 Tbsp butter. Since I don't have a spring form pan I used a pie plate. We ate it without the raspberry and whip topping on top. After removing a piece from the pie plate I put the crumbs that stayed behind in the pie plate on top for extra crunch. Next time I am going to use half low fat graham crackers and half fiber one original cereal.

In honor of those that keep of us informed about unhealthy recipes, I ate 2 pieces last night. In memory of those that have passed on before us due to unhealthy eating habits, I ate 1 piece today. OINK!
