Frosty Lemonade Pie Recipe

Ingredients

  • 1 package (8 ounces) fat-free cream cheese
  • 1 tub Crystal Light Lemonade
    [x]
    Add flavor to drinks and desserts with refreshing varieties of Crystal Light®.

  • 1 cup cold fat-free milk
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 1 carton (8 ounces) frozen fat-free whipped topping, thawed
  • 10 sugar-free lemon sandwich cookies, crushed
  • 1 reduced-fat graham cracker crust (8 inches)

Directions

  • In a small bowl, beat cream cheese and soft drink mix until smooth. In a bowl, whisk milk and pudding mix for 1-1/2 minutes (mixture will be very thick). Beat into cream cheese mixture. Beat in a third of the whipped topping. Fold in remaining whipped topping.
  • Set aside 3 tablespoons cookie crumbs. Fold remaining crumbs into cream cheese mixture. Spoon into crust. Sprinkle with reserved crumbs. Cover and freeze for 4-5 hours or until firm. Remove from the freezer 15 minutes before serving. Yield: 8 servings.

    Editor's Note: This recipe was tested with Crystal Light lemonade soft drink mix. One container (2.1 ounces) contains four tubs.

Nutritional Analysis: 1 piece equals 251 calories, 6 g fat (2 g saturated fat), 3 mg cholesterol, 457 mg sodium, 40 g carbohydrate, 1 g fiber, 7 g protein. Diabetic Exchanges: 2-1/2 starch, 1 fat.

Very easy and very good. Just couldn't find the diet lemon cookies had to use regular so lost a little of the low carb aspect.

I love lemon and this recipe is great! It is easy and quick to put together. On a hot day it is a wonderful treat to just pull out of the freezer.

This is amazingly delicious...not hard to make and really tastes good. I think it needs to thaw for at least 30 minutes before you can get a knife in it and then holds up beautifully in the fridge till it is gone. Great recipe.

What a great recipe. I didn't have the cookies in the house, so instead I cut up 5 or 6 washed strawberries. Had friends for an afternoon visit, the pie was almost gone. What a great treat for a hot afternoon.

This was such an easy dessert to make and so refreshing to eat plus being fat-free and sugar free. I did not have the cookies it mentioned to use so that ingredient was left out. We enjoyed it so much and I will definitely be making it again. And if I find the cookies I will include them to see if they make any difference.

A very nice pie to enjoy on these hot, summer days. I was also confused about the "lemonade tub", but then I remembered Crystal Light has been previously packaged in tubs. Now it is packaged in "tubEs". One of the old "tubs" made 2 quarts and one of the new "tubEs" only makes one quart, so I used two tubes in my pie. It seemed to work well.

Too lemony for me. It was very tart. Maybe using 1/2 packet of Crystal Light would be better. Otherwise, it was refreshing on a hot summer day.

Used sugar free lemon pudding in place of the vanilla pudding. My two grandsons could not get enough of the pie. Next time I will change to lime and try that.

This recipe was so easy and SO GOOD! I actually couldn't find s/f vanilla pudding, but found lemon and used that. I was afraid it would be too lemony, but it wasn't. I also could not find lemon s/f cookies but used s/f shortbread. It was still good...so refreshing!

A very nice summer dessert. Easy to make with very nice presentation. Would consider garnishing with fresh raspberries for a different look.

I am a diabetic. I use fat free/sugar free puddings and according to the label there is no trans fats in it. Or fats of any kind in there.  Which label are you reading?

This is very good. Fellow reviewers, "tub of lemonade" refers to Crystal Lite lemonade mix which used to come in tubs that make a 2 quarts of lemonade. They now come in tubes of mix.

Not sure why this is listed as healthy. There are partially hydrogenated oils/trans fats in instant puddings, and in graham crackers and in all frozen whipped toppings and I would not be surprised to find them in the lemon cookies as well. With Trans fats being so hard for the body to break down, this is far from healthy and a real artery clogger. I know the reduced fat graham crackers crusts list 1.5 trans fats per serving, so I would guess a serving of this pie would have about 4.5 to 5 grams of trans fats! Yikes.

A great recipe!!!! Just be sure and set it out well ahead of time so you can slice it...then separate the remaining slices so you can easily remove them from the pan.

I thought this pie was really refreshing, though it may have been a little too lemony. If I make it again, I'll use a little less Crystal Light. Really good on a hot day!
