Crushed lemon sandwich cookies give this creamy pie extra flavor. It's a wonderful dessert to store in the freezer for nights when you need a low-sugar treat in a hurry. -Emma Overby of East Prairie, Mississippi

Loved it. You don't even taste an after taste like most sugar free foods.

Very easy and very good. Just couldn't find the diet lemon cookies had to use regular so lost a little of the low carb aspect.

I love lemon and this recipe is great! It is easy and quick to put together. On a hot day it is a wonderful treat to just pull out of the freezer.

This is amazingly delicious...not hard to make and really tastes good. I think it needs to thaw for at least 30 minutes before you can get a knife in it and then holds up beautifully in the fridge till it is gone. Great recipe.

What a great recipe. I didn't have the cookies in the house, so instead I cut up 5 or 6 washed strawberries. Had friends for an afternoon visit, the pie was almost gone. What a great treat for a hot afternoon.

This was such an easy dessert to make and so refreshing to eat plus being fat-free and sugar free. I did not have the cookies it mentioned to use so that ingredient was left out. We enjoyed it so much and I will definitely be making it again. And if I find the cookies I will include them to see if they make any difference.

Thought this was an excellent summer dessert and very easy to make. I did however enjoy it more refrigerated than

frozen.
