Frosted Banana Bars Recipe
  • Prep: 15 min. Bake: 20 min. + cooling

Ingredients

  • 1/2 cup butter, softened
  • 2 cups sugar
  • 3 eggs
  • 1-1/2 cups mashed ripe bananas (about 3 medium)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • Dash salt
  • FROSTING:
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups confectioners' sugar
  • 2 teaspoons vanilla extract

Directions

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended.
  • Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.
  • For frosting, in a small bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and vanilla; beat until smooth. Frost bars. Yield: 3 dozen.

Nutritional Facts 1 bar equals 202 calories, 8 g fat (5 g saturated fat), 38 mg cholesterol, 100 mg sodium, 32 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchanges: 2 starch, 1-1/2 fat.

LOVE LOVE LOVE! I cut the sugar back to 1 cup and the confectioners sugar to 3 cups - turned out delicious. Next time I'd cut the sugar in the frosting in half - that would be sweet enough. This one's a keeper.

These are AWESOME!!! I don't like bananas but they were mashed so that was great. I also added a 1/2 C. Crushed Walnuts to the batter which was wonderful. I will make these again!!!

Can't count the times I've made this. I like to make it for hubs to share with co-workers and have also lost count of the times I shared the recipe. Simple cake, on-hand ingredients, very easy and super delicious. Can't ask for more.

I got this recipe from Karen I can't remember how many years ago. It's great! When I say I'm making Banana Bars the girls will say the ones with the cream cheese frosting. I just say is there any other one. I'm actually making these tomorrow. They are pretty much a staple in my house.Thanks again Karen.

This recipe is a family favorite.. Great way to use banana instead of making banana bread. Sometimes I just sprinkle it with powdered sugar... It's STILL yummy!
