Fresh Apple Cake with Caramel Sauce Recipe

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 2 cups chopped peeled tart apples
  • 1/2 cup chopped walnuts
  • CARAMEL SAUCE:
  • 1/2 cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1/2 cup light corn syrup
  • 1/4 cup half-and-half cream or evaporated milk
  • 1/4 cup butter, cubed
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten

Directions

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, nutmeg and cinnamon; gradually add to creamed mixture and mix well. Stir in apples and walnuts.
  • Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean.
  • Meanwhile, for caramel sauce, combine brown sugar and cornstarch in a saucepan. Add remaining ingredients. Bring to a boil; cook and stir until thickened, about 3 minutes. Serve cake warm or cold with warm caramel sauce. Yield: 9 servings.

If you have a sweet tooth - but still want your fruit too, this is for you. It is quite sweet - but the fresh apples and crunchy walnuts tame it down a bit. You could always omit the caramel sauce - but it is so heavenly with it. Have made it several times - and it is always gone almost immediately. I imagine it would keep well - as it is very moist - but I never have any left.

My 17-year-old daughter made this while I was out recently and when I came home the entire house smelled wonderful. She had no trouble making this cake or the sauce using the directions given. Because we do not use corn syrup, she substituted pure grade A maple syrup and it was absolutely delicious. I hope she makes this again soon, though if she doesn't I may just resort to baking it myself!

The cake was dry and very blah. Also, directions for the caramel sauce are not very detailed.You can not add an egg to a warm mixture without tempering it first.

Cannot use corn syrup, what can I use instead of. It was great but I probably won't make it again because of the syrup.

This is delicious. Anytime I've take this cake to a meeting or party I'm always asked for the recipe.

Loved this dessert! Some confusion with the instructions however. I could not 'POUR' the batter into the baking pan -- it was as thick as cookie dough! SCRAPE dough into baking pan would be more like it.

"Many thanks to Mrs. Karl Zank!" Just made this apple cake and sauce today. Positively delicious! My husband and guests thought I was a genius! The caramel sauce is very rich and creamy so a small piece will suffice. Try it! I think you'll love it!
